To create Fabiano Amarone della Valpolicella DOCG, growers hand-pick grapes from the prestigious Valpolicella Classico zone. Afterwards, they dry the grapes using the traditional appassimento method. “Storica” Amarone della Valpolicella DOCG Classico
Amarone is a wine of antique lineage. It has a limited production with grapes coming from the classic zone of Valpolicella. The grapes are hand picked, pressed and vinified according to the age-old traditional method. Its flavour is dry and pleasant with a characteristic perfume and its colour is deep pomegranate which is the result of prolonged ageing.
Region
Hilly vineyards between 200-350 meters above sea level, located in the municipality of Marano, in the classic area of Valpolicella.
Vinification
From the ancient drying methode for about 100 days, in the second half of january grapes are gently pressed and destemmed and fermentation takes place in stainless steel tanks at a controlled temperature of about 14°C for about 50 days, after 30 days of maceration on the skins.
Ageing
60% of the wine is aged for 24 months in 20-30-50hl Slavonian oak barrels; the remaining 40% in medium toasted Allier oak barrels for 18 months. Further evolution in bottle for 6 months
