Description
The denomination ‘Asolo Prosecco Superiore’ was created in 2009, alongside that of the neighbouring Conegliano Valdobbiadene Superiore, as part of the reforms that elevated the two hilly areas in the province of Treviso to DOCG status. This distinguished them from the Prosecco DOC zone which extends across the rest of the Veneto and Friuli Venezia Giulia regions. At that time, sparkling wine was just one of a lengthy list of red and white wines included under the umbrella of the Montello-Colli Asolani DOC, and the effect of the DOCG creation was not immediately felt in Asolo.
Montelvini Asolo Prosecco Superiore Extra Brut DOCG, a high-quality wine made from the best vines from the hills of Montello and Asolo. This Prosecco is obtained from Glera grapes, a bounteous grape variety with a robust texture, it is a tardive grape that matures towards the mid September.
The Extra Brut version is the most characteristic expression of Asolo Prosecco Superiore DOCG, as it highlights the typical peculiarities of the territory, minerality and sapidity, which combine to the freshness given by the Glera grape variety.
The winery’s logo is represented by an owl because the area where the winery is located is called “Zuitere”, or “land of owls.” An animal that has always been a symbol of wisdom, knowledge, and sensitivity and that in Montelvini represents the knowledge in selecting the best grapes our land can offer and the wisdom of respecting nature and its rhythms.
The Wine making process
The must is obtained by soft pressing of the grapes and is processed with careful control of temperatures, to keep the aromatic properties of the grape intact. Attention repeated in all stages of storage and frothing, controlling all oxygen inputs so as to preserve all the aromatic precursors that will be found in the glass during consumption. This results in a wine that is characterised by a pleasant fruity fragrance.
Characteristics
In a pale yellow colour shines a joyous foam that is subtle and persistent, enhancing the soft, youthful fragrance. The characteristic aroma ranges from fruity to floral. It is a soft wine, at once velvety and dry thanks to its balanced acidic notes. Splendidly balanced, it is undoubtedly a product of superior quality. The surprising freshness that tickles as it lingers, makes this wine suitable for all occasions. A fine aperitif that is also excellent with shellfish.
